Phyllo Pastry Trout Parcels - own recipe
Serves 4-6 people
2 deboned & skinned trout fillets
1 tub cream cheese (flavour of choice – we usually use sweet peppadew flavour)
8 spring onions, chopped
8 peppadews, thinly sliced
4 sheets of phyllo pastry
olive oil
1.Cut trout fillets into 5cm portions. Place on top of half a sheet of phyllo pastry. Season to taste with salt and pepper. Spread cream cheese on top of trout. Garnish with spring onions and peppadews.
2.Close parcel and brush with olive oil to seal. Bake in a preheated oven at 180ºC for 15-20 minutes.
